Ingredients of Bombay biryani:




  • 2 teaspoons cumin seeds
  • 2 teaspoons coriander seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon cloves
  • 1-inch cinnamon stick
  • 4 green cardamom pods
  • 2 black cardamom pods
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala

Recipe of Bombay Biryani:



  • Use cold water to rinse the basmati rice until the water runs clear. After soaking in water for half an hour, strain the rice.
  • Heat some oil or ghee over medium heat in a big pot. When the onions are golden brown, add the slices and cook. Half of the onions should be removed and reserved for garnish.
  • Add the ginger-garlic paste to the same pot and heat for one minute, or until fragrant. When the chicken pieces are browned on all sides, add them and continue to cook.
  • Stir in the chopped tomatoes, red chili powder, cumin, coriander, turmeric, and salt. Stir in the Biryani masala. Stir thoroughly, then simmer until the tomatoes are tender, a few minutes.
  • Add the plain yogurt and mix until well combined. Cook for another 5 minutes.
  • In a separate pot, bring water to a boil and cook the soaked and drained rice until it is 70% cooked. Drain the rice.
  • Layer half of the partially cooked rice over the chicken mixture in the pot. Sprinkle some of the reserved fried onions, mint leaves, and coriander leaves over the rice. Repeat with another layer of rice and garnish.
  • Once the rice is cooked through and the flavors have combined, cook it on low heat for 15 to 20 minutes with a tight-fitting lid on the pot.
